ABOUT: It would be hard to talk about biodynamics without mentioning Nikolaihof, one of the oldest wineries in the Wachau region of Austria, launching their foray into biodynamics in 1971 and being the very first to be Demeter certified in 1998. The Saahs family took over in the late 19th century and Nikolaus Saahs is the current winemaker. The have 22 hectares planted to Riesling, Gruner Veltliner, Weissburgunder, Malvasier, Neuburger, and Chardonnay, with an average vine age of 50 years.
