ABOUT: Ribiera Sacra is a DO in Galicia, Spain and has an ancient history of winemaking, first by the Romans and then by monks from the 8th-12th centuries. Dominio do Bibei is located in Quiroga-Bibei, a sub-zone of Ribiera Sacra, the hottest and driest zone of zones. The founder is Javier Dominguez, a madman rebuilding ancient terraces (currently 45 hectares planted out of 125) in order to plant low yielding vines. We should be grateful, the results have been terrific. This Mencia is truly unique and captures the essence of each vintage with grace and style.

TASTE: The 2012 Lalama is predominately Mencia, a grape variety experiencing a bit of a popular resurgence, and one that I love. Tremendous depth of flavors, raspberry, blackberry, black pepper, savory herbs and spices and a long finish...complex, and has a long life ahead of it. This wine is only going to get better as more hectares are planted; Tempranillo is the go-to Spanish grape, and is currently suffering a shortage. Come on Spain, knit more Mencia into your wine sweater.

PAIR: Roasted red pepper and spinach quesadilla, black pepper and garlic roasted tofu, black olive tapenade with figs and mint, and baked beans with a runny over easy egg.
