ABOUT: Nicknamed the “pope of Muscadet”, Guy Bossard has been making crazy high quality wine in Nantes since the early 1970’s and has been operating biodynamically for over 20 years. This is serious benchmark wine made by Muscadet enthusiast. Gentle, whole bunch pressing, ageing on the lees, and definitely terrior focused with each wine being named after a stone in the vineyard. The wines can age and are a tremendous value; if I had to guess, Guy Bossard’s wines are on every bistro’s wine list in Paris..

TASTE: The wine is medium bodied, citrusy, briny, salty, speaks of the ocean. Everything is medium (alcohol, body, acid) and is very expressive, not in a fruity sense, but the smell and taste on your tongue when you’re at the ocean. This is a perfect wine for the table with friends, or even better, a picnic with friends and an ocean view.

PAIR: Epoisses, beans, spinach, vinaigrette, zucchini, grilled vegetables, morels, and white radishes.
