ABOUT: Domaine d'Aupilhac lies across the river Herault from Daumas Gassac in Montpeyroux, about a 30 minute drive inland from Montpellier. The wines come from a few dozen hectares of craggy, limestone terraced vineyards populated by some of the very best Carignan and Mourvedre vines in the Languedoc. The Fadat family has managed the property for three generations but has only been bottling their wine since 1989. Sylvain is the man with the plan, managing the vineyard like a prize fighter and achieving the multi-year task of organic certification. The wines are stuffed with character, intense and complex, and benefit greatly from ageing. Carignan and Mourvedre allow for slow, assertive development and these wines can easily age for 20-30 years with outstanding results.

TASTE: Refreshing, bright, and medium in overall stats, this 2015 Languedoc Rouge “Lou Maset” from Domaine d’Aupilhac is an absolute star of wines under $20. The blend is dominated by Grenache and Cinsault, and rounded out with bits of Carignan, Syrah, and Alicante Bouchet. Aromas and flavors of blackberries, raspberries, and cherries, with lashes of garrigue, menthol, and fennel. Wild flavors with a rustic edge. If you drink wine with lunch, something I aspire to, this is the wine to reach for.

PAIR: Boston baked beans, roasted fennel and parmesan, Moroccan vegetable tagine, southern French eggplant-tomato gratin, and veggie bibimbap.
