ABOUT: Pascal Roblet-Monnot holds 6 Volnay hectares and a single hectare in Pommard which he plants at crazy-high density (12,000 vines per hectare) and keeps the yields low (30-35 hectoliters per hectare). The results are intensely flavored grapes, extracted and vital wines.

TASTE: Incredible vintage for Burgundy on the whole, with finesse and elegance across the board and tremendous ageing capability. The weather was pretty perfect and the fruit is perfectly ripe, though restrained, almost delicate, versus the over-extracted style. Flavors and aromas of cherry, raspberry, coffee, dark chocolate, herbs and campfire, with a firm structure of fine, silken tannins and a high amount of acidity. Amazingly good for how youthful it is, and will probably be an exhalted wine from a vintage to be considered one of the greats in years to come.


PAIR: Tabbouleh, fried cauliflower, lentils, Moussaka, Spanakopita, bell peppers, and veggie pot pie.
