ABOUT: On the limestone slopes of Mount Granier in Savoie lie the organically farmed vineyards of Domaine Giachino. Frederic Giachino took over the reigns from his father in 1988 and over the next few decades converted the vineyards to organics. In 2006 his brother David joined him and with him came biodynamic methods. In addition to growing the grape varieties the region is known for (Jacquere, Mondeuse, Gamay, Altesse) they’ve begun planting older varieties native to the region such as Persan, Mondeuse Blanche and Verdesse. Sustainability is very much the driving philosophy behind the decisions they make, and luckily the wines are absolutely exceptional. This is the first wine we’ve carried from Domaine Giachino and we get the fuss sommeliers are making about Mondeuse. Straight up delightful, springtime in a glass and supremely versatile with food.

TASTE: The Black Giac is 100% Mondeuse and is fermented with native yeasts, allowed a long maceration and aged in foudres. Minimal amounts of sulphur is used and the resulting wine is a lithe, almost carbonic-like red wine with delicate features and equally bright and dark flavors. Strawberries and dried cherries represent the fruit side, thyme, fennel, pine resin and oregano rep for the tertiary side, which lends itself to be a truly wonderful dinner wine. This is the wine to surprise a group of friends over a pizza.

PAIR: Fondue!, vegetarian La Tartiflette, mushroom omelet, stir fried pumpkin, spring vegetable pot au feu, burrata with roasted tomatoes, and roasted cauliflower fajitas.
