ABOUT: Winemaker Emmanuel Giboulot became an unintentional biodynamic pioneer when he was convicted and fined for not spraying his vines with pesticides by Burgundy authorities back in 2014. His conviction and fine were overturned, but doesn’t that seem crazy now? Times change so quickly. What’s important now though are the wines, and they are fantastic. He has little plots of vines all over Burgundy which he’s carefully acquired over the last several years. He’s bothering his neighbors in Saint Romain, Cote de Beaune, Rully, Cote Chalonnaise and Hautes-Cotes de Nuits. That’s a joke because his neighbors vines probably benefit from his presence. We love Giboulot here at Bio Wine because it is all top flight wine which is readily available and reasonably priced. That can’t be said for a lot of Burgundy.

TASTE: Combe d’Eve is 100% Chardonnay from the Cote de Beaune appellation and has deep aroma tones of lemon, green and red apple, peach, almond, thyme, jasmine, ginger, and bits of silvery, cool stone mineral. The palate mirrors the nose and exhibits a medium body, medium alcohol and high acidity. It’s precise and sort of cool and understated and holds a lot of interest. The acid is high enough to promote positive development for 20+ years. Let’s not wait though.

PAIR: Garden risotto, fried chickpeas with lime, ginger vegetable fried rice, chanterelles mushroom duxelle, and roasted squash with parmesan.
