ABOUT: We love the wines of Pomerol but when it comes to organic viticulture, let alone biodynamics, the picking for Biowineonline is slim…then in walked Château Gombaude-Guillot. Owned by Claire Laval, Dominique Techer and son Oliver (he makes the wine now), this small estate is producing excellent Merlot/Cab Franc blends right next door to the famous Chateau Trotanoy. Pomerol is know for clay soils with bits of gravel, the wines are based on Merlot, are smooth and rich and drink early and age well. Gombaude-Guillot ticks all these boxes plus a few unique ones, such a wildness, nervy, energetic, and earthy. Gombaude-Guillot makes wine that are a tremendous value as well, over delivering for the price in my estimation. Yet another unique box to tick.

TASTE: With 85% Merlot and 15% Cabernet Franc, this Gombaude-Guillot Pomerol has aromas and flavors of plums and blackberries followed closely by licorice, dark chocolate, potting soil and rosemary. The body is full, rich and lush with fine tannins. Both decadent and versatile, there is plenty of structure for ageing and can hold up to rich foods, but it's good young drinking too. Rest it or don't, either way this Pomerol will put a smile on your face.

PAIR: Brie, Camembert, mushrooms, white asparagus, spring vegetable stew, walnuts, pesto, and cranberries.
