ABOUT: Chateau Falfas is situated on the right bank of the Gironde river, around the small town Bourg-sur-Gironde, near Bordeaux. Vineyards have been in the area since the 2nd century AD, and the town has many Roman fortification sites, as well as abandoned limestone quarry’s that were dug to build the city of Bordeaux. Chateau Falfas was rebuilt in 1612 and is placed on top of a foundation from the Hundred Years’ War. Véronique Cochran farms 20 hectares of Merlot, Cabernet, Cabernet Franc and Malbec and has farmed biodynamically since 1988. Her father was the famous biodynamic pioneer, researcher, author and viticultural consultant François Bouchet, who consulted all over France, and undoubtedly inspired his daughter to be a pioneer of biodynamics in a region where it is rarely practiced.

TASTE: This wine is comprised of 55% Merlot, 30% Cabernet Sauvignon, 5% Cabernet Franc, 10% Côt (Malbec) and spent 11-14 months in barrel, a third of the barrels new. Really good quality Bordeaux, dense and dark, blackberry and licorice and coffee and chocolate. Smoke and a pepper spice is lingering in the background while the finish takes a good deal of time to finish up. Excellent quality and drinking perfectly right this minute.

PAIR: Grilled and smoked tofu, gouda, stilton, hollandaise sauce and shitake mushrooms.
