ABOUT: Adalia is a lovely name for a wine producer. It’s the name of a ladybug that lives in the vineyard and munches up the harm-doing aphid population. Adalia came to be when celebrated winemaker Marinella Camerani picked up some precious 5 hectares of vineyards in the Val di Mezzane (Valpolicella) in 2009. These slabs of vines are surrounded by cherry trees and olive groves, with the white grapes grown high in elevation in chalky soil, trained in the double pergola style. All farming is organic and includes carefully chosen biodynamic practices. While Marinella and her daughter Federica make outstanding Amarone and Ripasso, we’re kicked in the teeth by the Soave they produce. Fresh bottled energy that we can’t get enough of.

TASTE: The Adalia Singan Soave 2020 is a blend of 80% Garganega, 10% Trebbiano, and 10% Chardonnay. The grapes are hand harvested with indigenous yeasts employed for fermentation. Malolactic fermentation is encouraged in steel tanks, then the wine has a few months rest before being bottled. Subtle, bright, fresh aromas and flavors of green and red apple, lemons, and almonds. Medium bodied with a sensible, balanced, medium amount of acidity. We are big fans of white wines with restrained acidity, and this is one to holler for.

PAIR: Goat cheese laced polenta, white sauce pizza with red potato and roasted red onion, tempura vegetables, pesto and ricotta crostini, golden cauliflower, white asparagus, and grilled radicchio.
